Cheap and Easy Homemade Funnel Cakes
The other week we picked up several boxes of Aunt Jemima Pancake mix. Now although we love pancakes, I felt the need to turn something ordinary into something extraordinary today. Plus I am thinking about our upcoming Fall Festival at church and trying to get some ideas for food. We decided to try to make homemade funnel cakes with the pancake batter and they turned out pretty good! I know they are terrible for your arteries but.... eat some extra greens tonight!
Ingredients:
1 cup Aunt Jemima Pancake Mix
3/4 cup water (for actual pancakes, you are supposed to use milk but we used water. It may taste better with milk?)
1 egg
Dash of cinnamon
Oil for Frying
Confectioners Sugar
Directions:
Basically, just mix all of the ingredients above and heat your oil until it is bubbly. Drizzle the batter into the oil and cook until you see the batter beginning to brown. Flip over carefully and then cook until the other side is browned and then quickly remove and place on some paper towels on a plate. Sprinkle with confectioners sugar and enjoy. Super easy! I think I only paid $0.88 for each box of pancake mix. Not too bad!
