Real Meals From The Deals - October 3


For some of you that cannot open the printable document in the first post, here is the Menu and Shopping for this Week: *Blue items are participating items in the the Kroger Mega event sale and you must purchase 10 participating items to get the price listed.  ($5.00 off for every 10 items / $.50 off per item).  Items in red are NOT part of the sale.  Some additional coupons are listed for alternative brands that may not be on sale.

Meal #1 – (Crockpot) Ham, Green Giant Valley Fresh Steamers, Garlic Mashed Potatoes, Sister Schuberts Rolls


(SAVE 2 CUPS OF HAM FOR MEAL #3)

Ingredients:

1 Shank Ham


Directions: Wash ham and place the entire ham in the crockpot. Cook on high for 4-5 hours or on low for 7-8 hours. Even though it is simple, it is really good the longer it cooks. The ham flavors itself and there is no need to use any additional spice.

Side Dishes:

1 bag of Green Giant Valley Fresh Steamers

1 pkg. of Sister Schuberts Rolls

4-6 potatoes, peeled and cut

4 cloves of minced garlic

1 pkg. cream cheese (reduced fat or fat free)

1 Tbsp. butter or margarine

1 tsp. salt

Directions:  Again, these are pretty simple, but cook the rolls and Steamers as directed on pkg. For potatoes, simply boil until tender and then drain. Mix and mash the potatoes with garlic, cream cheese, butter and salt.

Meal #2 – Fettuccine-Parmesan Chicken (Easy - One Dish Meal)


Ingredients:

1 Tbsp. Oil

2 cloves garlic, minced

2 cups marinara sauce

2 cups water

1 pkg. fettuccine

1 bag Green Giant Valley Fresh Steamers-frozen cut green beans, thawed

2 cups cubed chicken

½ cup grated parmesan cheese

Directions: Cook chicken (if using the bone-in then remove before cooking. Heat oil over medium heat and add garlic. Cook about 30 seconds. Stir in marinara sauce and water. Cover, heat to boiling over medium heat. Add the fettuccine and green beans. Stir. Return to boiling; cover and boil 3 to 5 minutes or until beans are tender. Stir in the chicken and cook an additional 3-4 minutes. Remove from heat and sprinkle with cheese.

Meal #3 – Ham Pie and Baked Applesauce (Use 2 cups of ham from meal #1)


Ingredients:

1/2 cup chopped fresh broccoli

1/4 cup chopped green pepper

1/4 cup chopped fresh mushrooms

3 tablespoons chopped onion

1 garlic clove, minced

2 teaspoons vegetable oil

2 cups chopped ham, divided

1 1/2 cups shredded Swiss cheese, divided

1 (9 inch) unbaked pastry shell

4 eggs, beaten

1 cup light cream

Directions: In a saucepan, sauté the broccoli, green pepper, mushrooms, onion and garlic in oil until tender. Sprinkle half of the ham and cheese into pie crust. Cover with the vegetables and the remaining ham and cheese. Combine eggs and cream; pour over ham and cheese. Bake at 350 degrees F for 45-50 minutes or until knife inserted near the center comes out clean. If needed, cover edge of crust with foil to prevent excess browning. Side Dish:

Ingredients:

4 large tart apples, peeled and sliced

1/4 cup and 2 tablespoons sugar

1/2 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

Directions: Place apples in a greased 1-qt. baking dish. In a small bowl, combine sugar, cinnamon and vanilla; mix well. Sprinkle over apples. Cover and bake at 350 degrees F for 40-45 minutes or until apples are tender. Uncover and mash with a fork. Serve warm.

Meal #4 –Baked Beef Ziti, Salad, Garlic Bread


Ingredients:

12 oz uncooked ziti

1 tsp olive oil

2 medium garlic cloves, minced

1/3 pound lean ground beef

1 tsp dried oregano

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp table salt

1/2 tsp black pepper

28 oz can crushed tomatoes

1 cup part-skim mozzarella, shredded

Directions: brown beef in garlic and olive oil and drain. Add all the ingredients except pasta and cheese. Simmer for about 5 min. Combine the pasta and meat mixture and pour into a 9 x 13 dish. Top with cheese. Bake 30 min. @ 350.

Side Dishes:

1 New York Garlic Bread

Lettuce or Baby Leaf Spinach

Salad Dressing and Toppings



Directions: Prepare salad as desired and cook Bread as directed on package.


Meal #5 – (CROCKPOT) Taco Soup


Ingredients:

1 can pinto beans

1 can white beans or kidney beans

1 can niblet corn

1 can Rotel tomatoes & chilies

1 can diced tomatoes

1 can diced green chilies

1 envelope taco seasoning mix

1 envelope hidden valley ranch dressing mix

1 lb shredded chicken, ground beef or ground turkey

 Directions:  Cook meat and then add all ingredients to crockpot. Do not drain the cans. Cook on high for 2-3 hours or low for 4-5 hours.

Side Dish:

• Tortilla chips

• Cheddar Cheese

• Sour Cream

Serve soup over the chips and top as desired with cheese and sour cream.


Meal #6 – Pumpkin Pancakes with Smoked Sausage (Breakfast or Dinner)


Ingredients:

1 15 oz. can Libby's Solid Pumpkin or

1 ½ cups pumpkin)

4 eggs

1 1/2 cups milk

a scant 1/4 cup sugar

1 1/4 teaspoons cinnamon

1/4 teaspoon all spice

1/4 teaspon nutmeg

1/2 teaspoon vanilla

2 ½ cups pancake mix

Directions: Mix all ingredients together. Heat a large skillet or griddle and coat with butter. Pour slightly less than a quarter cup of batter onto heated griddle. Turn when pancakes bubble and bottoms are golden brown.
Serve with your choice of syrup.


Side Dish:

Smoked Sausage
Directions: Cook as directed on package
